Curing salt is used to inhibit the growth of bacteria in preserved meats, while maintaining ideal color and flavor. Curing salts are used in food preservation to prevent or slow spoilage by bacteria or fungus. Typically they’re used for pickling meats as part of the process in making sausage. One purpose for curing meat is to make a high-quality meat product for future consumption. Only correctly butchered and completely cooled meats should be used. Fresh meats can be cured at home using one of two methods: dry cure or pickle cure (also known as sweet pickle cure). Typically dry cured meats are not injected with sweet pickle. If proper temperature control is difficult to achieve, then the use of a "pickle cure injection" is often used to help ensure a high quality safe product. And because Sage doesn't break down quickly and lose flavor in the cooking process like many herbs, you can add it earlier in the cooking process instead of waiting until the very end. Sage herb originates from the northern Mediterranean region but today is cultivated primarily in Europe and the United States (in California, Oregon and Washington). Our Sage is grown in Albania and is quite fragrant and aromatic and the taste is slightly bitter and pungent. Sage possesses a robust flavor so it is best partnered with other strong flavors like garlic and pepper.

Native to Asia Minor (roughly modern day Turkey) and the Mediterranean region, Coriander grows easily and can be found growing wild in Africa, Egypt, and England. The coriander plant produces both the leaves (which is used as cilantro) and the fruit (these seeds are coriander). The plant must be cultivated for only one of these as the "cilantro" leaves must be picked before the plant matures to produce the seeds. There are two types of Coriander seeds - Moroccan and Indian. Moroccan Coriander Seeds (also known as European Coriander) are usually grown in Morocco or Canada and are the more common of the two. The Moroccan Coriander seeds are round and a light brown in color. The flavor profile of the Moroccan or European Coriander is spicy and warm with citrusy undertones. Indian Coriander Seeds are more oval shaped, yellow in color and have a stronger flavor profile with more noticeable citrus notes and hints of nuttiness. This European or Moroccan style Coriander Seed is grown in Morocco. Coriander is a staple ingredient in spice blends like Garam Masala and Indian curry. Coriander features a spicy, warm, citrusy flavor that is enjoyed in African, Chinese, Latin American, Middle Eastern, Mediterranean, Mexican and Southeastern Asian cuisines. Because Coriander's taste is rather mild, you can experiment rather generously without overwhelming a dish. Coriander works well in combination with allspice, chili, cinnamon, cumin, fennel, garlic and ginger. In our opinion you can’t go wrong with either. Add 1 cup water (or milk) to a small sauce pan and bring to a boil, stirring in the Mayan Coco blend and then reduce the heat to low and let simmer for 2-5 minutes (stirring frequently). For an even more authentic version stir in a teaspoonful or more of masa (Mexican corn meal used to make tortillas). Worldwide there are a number of spice blends that are so closely associated with their place of origin that they're practically synonymous with the cuisine - say, Jerk Seasoning with Jamaica, Garam Masala with northern India and Cajun Seasoning with New Orleans. Others, such as curry powder, have become such true global forces that they have spread far and wide and variations exist within the different regions that they’re found. There is no single recipe for Dukkah as it varies depending on the preparer’s preferences. The most common ingredients, as close to universal as you’ll get, are sesame seeds, coriander, cumin, salt, pepper and some type of nut. Throughout the Middle East, Dukkah is typically eaten with flatbread — it may be sprinkled on top, or more commonly the flatbread is first dipped into olive oil and then into the Dukkah mix. Unlike the majority of all seasoning blends this one is also highly adaptable where in addition to being used as a condiment or garnish, its chunky, textured nature makes it easy to eat by the handful as a snack. In Middle Eastern street markets it is often found portioned out in paper cones for snacking by itself.
